Duchess Potato is something I've been wanting to do like, forever. Since the last Daring Cook's Challenge (the Papas Rellenas), I have paid a lot of attention to potatoes. I think I finally bought starchy potatoes here in Korea. The texture was completely different from the ones used for the challenge. I was so excited I decided to make something special, and this is why I made these Duchess Potatoes.
They are incredibly easy to put together and make a gorgeous side dish for many different kinds of meals. I served with beef stew and it was delicious! I used the recipe from The Well-Seasoned Cook, using Parmigiano Reggiano and omitted forgot to use paprika as a "makeup" but will certainly use it next time! Thanks Susan for sharing this fabulous recipe!
