I love Soufflé! I don't make it very often, but have made one just a few days ago to use up leftover vegetables. It puffed up beautifully.

A few days ago, I also decided that I would join The Daring Cooks group at THE DARING KITCHEN as I have seen so many great recipes and results lately. For my surprise, on the reveal day (14th), I found out that the challenge was to make "Soufflé"!!! My first DC challenge is going to be December, but I have already felt like being part of the group since November :o)

MY BASIC "SOUFFLÉ" RECIPE:

250ml milk
2 tbsp cornstarch
a pinch of salt
1/4 cup shredded Parmesan
3 eggs (separated )
1 cup steamed vegetables of your choice (or other filling you prefer) 
  
In a small sauce pan, combine milk and corn starch. Cook over medium heat, stirring constantly, until it boils and thickens. Remove from heat, add cheese. Stir well until combined. 

In a bowl, lightly beat egg yolks and add a little bit of the milk/cheese cream. Pour this mixture back into the pan with the rest of the cream and stir well. Stir in the vegetables. Set aside.

Beat egg whites until firm but not dry. Fold them into the cream. Pour into a greased baking pan or small baking bowls that have been sprinkled with dry bread crumbs. Sprinkle some more bread crumbs and Parmesan. 

Bake in preheated oven (200°C) for about 25 minutes or until well puffed and golden brown. Serve immediately.
