Moqueca is a a traditional dish from the northeast coast of Brazil. I'm not from that region and I am in no way trying to pass on the real deal of the recipe. This is just a simplified moqueca that can be made very easily and fast for the times when you are in a hurry and need a speedy and delicious meal. It can be adapted in many ways such as adding onions, bell peppers, other seafood of your choice and even palm oil (azeite de dendê) which will make it taste more authentic. But I love this simple version that I learned many years ago from a TV show I can't even remember the name :o)

5 MINUTE "MOQUECA"
700g fillet of white fish of your choice
300g shelled and deveined shrimp (optional)
1 cup thick tomato sauce (homemade or canned)
200ml coconut milk
2 tbsp finely chopped fresh cilantro
2 tbsp finely chopped fresh parsley
In a pressure cooker, pour all the tomato sauce to cover the bottom of the pot. Arrange the fish on top of the sauce, you may overlap the fillets. Put on the lid and cook for 5 minutes (count time only after the pot is under pressure), over low heat. Remove pot from the stove and place it in your sink and let some cool water run over it until the pressure is gone. Make sure the pot is no longer under pressure before opening.
If you are using the shrimp, add it now and cook for one minute longer (no pressure) before adding the other ingredients.
Add the coconut milk, cilantro and parsley, put back the lid and make a circular movement with the pot to mix well. Serve immediately with a side of white rice. Chilli pepper sauce may be added to taste.

I have heard that moqueca is delicious and have always wanted to try it. And your lovely picture is making me want it even more! I don't have a pressure cooker, but I will certainly try to make on the stove or in a slow cooker. Sigh, I'll have to wait longer than five minutes though...
ReplyDeleteI have never tried moqueca. What I do love is that this is a simple and seemingly tasty dish. Who can go past a recipe that takes 5 minutes on a work night!
ReplyDeleteA very close friend of mine is from Brazil (she's a Paolista), and I love all the food! Especially feijoada, pao de queijo, and moqueca. I've never tried cooking it at home although I've eaten it a few times. Will definitely give this a try, it looks delicious.
