These muffins are truly delicious. The batter is made with the apple peels and the flesh is added in small cubes that after baked are soft and moist. I added chopped walnuts for crunchiness and cinnamon for spiciness. It is very easy to put together. Preferably use organic apples since you are going to use the peels also :o)
APPLE WALNUT MUFFINS (with apple peels)
2 medium apples (370g) washed and dried
2 eggs
1/4 cup vegetable oil (I used grape seed oil)
1 cup all purpose flour (I used 1/2 whole wheat)
1/2 cup white sugar
1/2 cup brown sugar
1/2 tbsp baking powder
1/2 cup coarsely chopped walnuts
1/2 tbsp ground cinnamon
Preheat the oven at 390°F (200°C).
Separate and measure all ingredients.
Peel the apples, leaving a little more flesh on the peels than you would normally, and reserve the peels.
Core the apples and cut them into little cubes. Set aside.
Blend the peels, eggs, oil and sugars until smooth.
In a bowl, whisk together flours, cinnamon and baking powder.
Pour the mixture from the blender into the bowl with dry ingredients and whisk well.
Fold in the apple cubes and walnuts.
Pour batter into muffin pans lined with paper muffin cups, filling up to 2/3. You may want to garnish with pieces of walnuts.
Bake at 390°F (200°C) for about 25 minutes or until testing with skewer, it comes out clean.
Remove from the oven and from the muffin pan onto a wire cooling rack.
